How to Make Homemade Vegetable Beef Soup
Making homemade vegetable beef soup is a great way to use up the last of winter’s vegetables before they go bad. This savory soup is loaded with flavor, hearty and filling, and is a great way to feed a crowd. Here’s how to make it in a few simple steps.
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 bell peppers, chopped
- 1 box diced tomatoes
- 1 can corn
- 1 cup green beans
- 1 cup mushrooms, chopped
- 1 tsp oregano
- Salt and pepper to taste
- 8 cups beef stock
Directions
- In a large stock pot, heat a tablespoon of oil and add the ground beef. Cook until browned, about 5 minutes. Add the onion, garlic, carrots, bell peppers and sauté until fragrant, about 5 minutes
- Add the diced tomatoes, corn, green beans, mushrooms and oregano and season with salt and pepper. Cook until the vegetables are softened, about 10 minutes
- Pour in the beef stock and bring to a boil, then reduce the heat and simmer for 30 minutes. Taste and adjust seasoning, if needed
- Serve hot with crackers or crusty bread
