Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 bell peppers, chopped
  • 1 box diced tomatoes
  • 1 can corn
  • 1 cup green beans
  • 1 cup mushrooms, chopped
  • 1 tsp oregano
  • Salt and pepper to taste
  • 8 cups beef stock

Directions

  1. In a large stock pot, heat a tablespoon of oil and add the ground beef. Cook until browned, about 5 minutes. Add the onion, garlic, carrots, bell peppers and sauté until fragrant, about 5 minutes

  3. Pour in the beef stock and bring to a boil, then reduce the heat and simmer for 30 minutes. Taste and adjust seasoning, if needed
