How to Make Homemade Vegetable Beef Soup

Making homemade vegetable beef soup is a great way to use up the last of winter’s vegetables before they go bad. This savory soup is loaded with flavor, hearty and filling, and is a great way to feed a crowd. Here’s how to make it in a few simple steps.

  • 1 lb ground beef
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 bell peppers, chopped
  • 1 box diced tomatoes
  • 1 can corn
  • 1 cup green beans
  • 1 cup mushrooms, chopped
  • 1 tsp oregano
  • Salt and pepper to taste
  • 8 cups beef stock

  1. In a large stock pot, heat a tablespoon of oil and add the ground beef. Cook until browned, about 5 minutes. Add the onion, garlic, carrots, bell peppers and sauté until fragrant, about 5 minutes
  2. Add the diced tomatoes, corn, green beans, mushrooms and oregano and season with salt and pepper. Cook until the vegetables are softened, about 10 minutes
  3. Pour in the beef stock and bring to a boil, then reduce the heat and simmer for 30 minutes. Taste and adjust seasoning, if needed
  4. Serve hot with crackers or crusty bread
