How to Make Vegetable Beef Soup
Steps:
- Chop the beef into cubes
- Heat the butter in a large pot
- Add the beef and season with salt, pepper and paprika
- Stir and cook until the beef is lightly browned about 5 minutes
- Stir in carrots, celery, onions, garlic, and ginger
- Stir and cook for few minutes until vegetables are starting to soften
- Pour in the broth, tomatoes, and bay leaves
- Bring the soup to a boil, then reduce the heat and allow to simmer for 45 minutes
- Add the potatoes and beans to the soup
- Simmer for about 30 minutes until the potatoes are cooked through
- Add salt and pepper to taste
- Serve the soup with a sprinkle of chopped parsley or fresh herbs
