Shrimp Soup With Vegetables
Ingredients List
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 1/4 cup onion, chopped
- 3 cloves garlic, minced
- 1/4 teaspoon thyme
- 1/4 teaspoon oregano
- 2 tablespoons celery, diced
- 1/2 cup carrots, diced
- 1/2 cup green bell pepper, diced
- 2 cups shrimp, peeled and deveined
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat oil in a large pot over medium-high heat.
- Using a whisk, stir in the flour. Cook the flour for a minute, stirring frequently.
- Slowly stir in the chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add onion, garlic, thyme, oregano, celery, carrots, and green bell pepper. Simmer for 10 minutes, stirring occasionally.
- Add shrimp and cook for 3-5 minutes, until shrimp are cooked through.
- Season with salt and pepper. Serve warm.
