  5. Bring mixture to a low boil and then reduce heat and simmer uncovered 20 minutes or until vegetables are tender.
  6. Heat remaining tablespoon of olive oil in a small skillet over medium heat.
  7. Add chopped onion and stir to combine.
  8. Saute 3-5 minutes or until onion is lightly browned.
  9. Remove from heat and stir into Cult of the Lamb mixture.
  10. Serve Cult of the Lamb with crusty bread or a side salad.
