What does the Bible say about vegetables?

In Proverbs 15:17, it says “Better is a dinner of vegetables where love is, than a fattened ox and hatred with it.” This verse is referring to the importance that a balanced family meal has, where the focus is on love and connection as opposed to a luxurious meal with hostility. This verse also implies that vegetables can be a form of sustenance, as important as even the most expensive of meats.
Vegetables are Part of Being Healthy
The book of Daniel talks about the successful transition of Daniel, Shadrak, Meshak, and Abednego to a diet of only vegetables and water instead of rich food and wine served at King Nebuchadnezzar’s table. Despite the prohibition to eat from the royal table, Daniel and his friends were so keen to observe their Jewish dietary laws that they were able to stay healthy and strong. Daniel 1:12-15 speaks of their successful diet transition.
Vegetables are Essential for a Balanced Diet
In Leviticus 11:1-2, the Lord instructs Moses to tell the people which animals they may and may not eat. He then goes on to explain various clean and unclean vegetables and fruits to be eaten. From this verse we can infer that vegetables are an important part of a balanced and healthy diet.

In Psalm 145:15-16, it is written “The eyes of all wait upon thee; and thou givest them their meat in due season. Thou openest thine hand, and satisfiest the desire of every living thing.” This verse is talking about God’s provision for all of his creation. He is the giver of life who provides meat, or food, in the form of vegetables and other sources, in the perfect season.
